Alain’s Green Goddess Dressing

We have been asked to share this so many times by friends who rave about it, so here it is! It started as Lorene’s Green Goddess ‘weed’ dressing many years ago, but as Alain is now chief cook, I renamed it in my book, to honour all the support AND good food he provides on a daily basis. Good men have some Goddess in them, too!

It is an excellent dressing which can be used on salads, vegetables, grains or meats to add essential fatty acids, herbal nutrition and flavour. The apple cider vinegar or lemon juice also help pre-digest salads, like ceviche. I often suggest adding dressing 1/2 hour before – the wilting that occurs is an indicator that the cellulose is being broken down. Chapter 10 offers twenty recipes to help people get started on healthy eating, which is a major pillar of both healing and maintaining optimum health.

Alain’s Green Goddess Dressing

Basic ingredients:
• 1 cup (250 ml) cold pressed olive oil
• 1 Tbsp. (15 ml) lemon juice and/or
• 1 Tbsp. (15 ml) apple cider vinegar (pure unpasteurized)

This is the basic recipe so play with it!

What makes the dressing delicious and nutritious is the addition of as many herbs, weeds and other ingredients that your imagination, your fridge and your taste buds allow. This is what makes it your Green Goddess Dressing:
• Garlic cloves (1 – up to your tolerance)
• Onions – 2 Tbsp. to ½ cup
• 1/8 tsp. mustard powder
• Chives, oregano, marjoram, parsley, sage, rosemary or thyme. (like the song)
(Lorene sometimes adds a few fresh leaves or ½ tsp. dried of any of the following lemon balm, mint, spearmint, fennel or catnip for accent flavour.)
• Weeds such as chickweed, nettles, dandelion, sorrel greens all add vitamins, minerals and different flavours.
• Fresh greens such as kale, beet tops, spinach

For extra nutrition add miso, engevita yeast, Bragg’s aminos to taste

Preparation:
Blend at high speed until all ingredients are well liquefied.
Other options, dependent upon your food preferences, blood type and condition.

For creamier/ranch:
3 Tbsp. healthy mayonnaise (optional)
2 Tbsp. organic sour cream or yogurt (optional)

For “Thousand Island” : blend in fresh tomatoes

For Caesar: add a raw egg (coddled first in hot water 1 minute), mustard, lots of garlic, and optional capers, anchovies, Worcestershire, Parmesan cheese.

For additional Essential Fatty Acids, you can add coconut oil, hemp oil, omegas – just check the flavour.
Use freely on salad, vegetables, meat, fish, poultry, eggs. At least two tablespoons per day will help your intake of healthy oils.

  1. Yes, this dressing is great, not only for salds, but on vegies and grains! We have even used it as a marinad for roasted vegies, meat or fish.
